Stockholm calling

Yeeeeeah, four days Easter holidays in Sweden. What would be lovelier? Though, I'm a bit nervous, because of the summer job interview at a restaurant. At least I'm able to say my name with a whole sentence on swedish...  However, I'm also told to bring my bikinis with me (!). It means there must be quite warm. To my plans include hanging around with friends, walking in Stockholm and unfortunately reading some school stuff besides the interview and enjoying the sunny weather. I promise ti take some nice pics from Sweden, too.
And about Easter. We, meaning our family, have never had Easter traditions. Still, we used to cook and/or something nice for the weekend. Here is a recipe I recommend.


Ingredients

  • 4 cups chopped rhubarb
  • 1 1/3 cups white sugar
  • 6 tablespoons all-purpose flour
  • 1 tablespoon butter
  • 1 recipe pastry for a 9 inch double crust pie

Directions

  1. Preheat oven to 450 degrees F (230 degrees C).
  2. Combine sugar and flour. Sprinkle 1/4 of it over pastry in pie plate. Heap rhubarb over this mixture. Sprinkle with remaining sugar and flour. Dot with small pieces of butter. Cover with top crust.
  3. Place pie on lowest rack in oven. Bake for 15 minutes. Reduce oven temperature to 350 degrees F (175 degrees C), and continue baking for 40 to 45 minutes. Serve warm or cold.
